Build your own matched set from a single forge, every blade. Every blade in the Umi Series is cut from the same recipe: a hard stainless steel cutting core wrapped in layers of suminagashi Damascus, finished for an edge that bites and holds. Each knife is fitted with a genuine abalone shell wa-handle, so the set works and looks as one across the board. Choose the blades your kitchen actually uses and skip the ones it does not. The Gyuto is the daily chef knife for breaking down proteins and running your mise en place. The Santoku is the nimble all-rounder across meat, fish and vegetable. The Nakiri is the vegetable specialist, falling straight through onions, cabbage and squash. The Cleaver is the tall vegetable blade for squash, root vegetables and other dense produce. The Petty is the precision blade for shallots, garlic, herbs and close-in trimming. Add what you need and you get one coordinated kit, every piece forged to the same standard. Forged not to break. Honed not to bend. Made to cut.

Features

• One forge, one recipe: every blade shares a stainless steel cutting core wrapped in layers of suminagashi Damascus, so the set matches edge to edge.
• Genuine abalone shell wa-handles on every piece for a balanced grip and a unified look across the kit.
• Edge hardened for edge retention: sharp enough to bite cleanly and hard enough to hold that edge through real prep.
• Each knife covers a defined job: Gyuto for daily chef work, Santoku as the quick all-rounder, Nakiri for vegetables, Cleaver for squash and dense produce, Petty for fine precision work.
• Build your own set: pick only the blades your kitchen uses and leave the rest, with no overlap and no filler.
• Coordinated from the start so the kit reads as one collection on the rack, not a mix of mismatched blades.

Build your set from the Umi Series: Gyuto, Santoku, Nakiri, Cleaver and Petty, every blade forged to the same stainless steel and suminagashi Damascus standard with matching abalone wa-handles.
